Triglie allo zafferano

La triglia viene annoverata tra i pesci pregiati, nonostante l’elevata quantità di spine che presenta. Di triglie se ne distinguono due qualità: quella di scoglio e quella di fango (o di sabbia). La triglia di scoglio è la varietà più pregiata, e puoi tranquillamente distinguerla da quella di fango per il suo colore rosso vivo e le striature dorate. Ha inoltre una carne più soda e più saporita, che la rende ideale per essere cucinata in vari modi, ma ricorda che, per assaporarla e gustarla al meglio, è sempre buona norma non coprirla con troppi condimenti.

Una famosissima tecnica sarda per cucinare è “a schiscionera”, ossia cucinare ed aromatizzare una pietanza utilizzando solamente cinque ingredienti: aglio, olio, prezzemolo, sale e pepe. Un metodo che, nonostante la sua semplicità, riesce ad esaltare ed amplificare il gusto di carni, pesci e verdure.
Questo piatto è stato realizzato utilizzando proprio questo metodo, ed il sapore del pesce è stato esaltato ulteriormente dall’aggiunta dello zafferano, altro ingrediente fondamentale nella cucina sarda.

Ingredienti per circa 5 persone:


1 Kg di triglie di media grandezza
un mazzetto di prezzemolo
uno spicchio d’aglio
una bustina di zafferano
2 cucchiai di olio extravergine d’oliva
sale
pepe

Squamare, eviscerare e lavare le triglie. Disporle in un tegame con un trito grossolano di prezzemolo e con l’aglio tagliato a fettine. Aggiungere dell’acqua fino quasi a coprirle, salare e pepare. Cuocere per circa 4 minuti per lato. Prima di completare la cottura del pesce aggiungere lo zafferano. Servire caldo.

The mullets are counted among the valuable fishes, despite the high amount of thorns that own. Are distinguished two types of mullets: the red mullets and the mud mullets (or sand). The red mullet is the variety more valuable, and easily you can distinguish it from that of mud for its bright red color and golden stripes. It also has a more firmed and tastier meat, which makes it perfect to be cooked in various ways, but remember that, to savor it and taste it better, it's always a good idea not to cover it with too much condiments.

A very famous Sardinian technique for cooking is "a schiscionera", that is cooking and flavoring a dish using only five ingredients: garlic, oil, parsley, salt and pepper. A method that, despite its simplicity, prove to be useful to enhance and amplify the taste of meats, fishes and vegetables.
This dish was made using this method and the flavor of the fish was further enhanced by the addition of saffron, another key ingredient of the Sardinian cuisine.


Ingredients for about 5 people:


1 Kg of medium-sized mullets
a bunch of parsley
a clove of garlic
a sachet of saffron
2 tablespoonfuls of extra virgin olive oil
salt
pepper

To scale, eviscerate and wash the mullets.
Place them with a coarse chopped of parsley and the garlic cut into slices in a pan. Add of the water until almost cover them, add salt and pepper. Cook for about 4 minutes for side. Add the saffron before completing the cooking of the fishes. Serve hot.
